There is no substitute for fresh ingredients when it comes to flavour. Dried or frozen looses certain characteristics, we are all about flavour.

Where possible we work with local growers and distributors. We only import products if they have unique characteristics such as Moroccan preserved lemons.
We give recipes justice to their origins and methodology, for example our harissa is made from predominantly peppers and chillies rather than tomatoes as in North Africa. Our Black bean sauce uses rice wine vinegar rather than a western substitute.
