Casa Varisco : Olive pasta sauce
Green & black olives, large capers, fresh tomatoes, parsley, prosecco.
Stir in to pasta, drizzle a good quality unfiltered olive oil, add some aged Parmesan.
Puttanesca: Heat in a pan with a couple of anchovies, when hot, add some cooked tuna fish, if it is from a can, rinse it first in cold water then drain it. Stir in the tuna until heated- do not over cook or it will create a nasty flavour.
